MUSI3041 Assignment 2: Sound Map

Introduction
The theme of this sound map is mainly related to the food aspect because I am a huge food lover, but I have seldom paid attention to the sound of the food preparation process, so I wanted to use this opportunity to get a good feel of what the food sounds like. I collected ten pieces of food making sounds in Kennedy Town and Causeway Bay in two days on October 10 and October 11. I used mainly Sony PCM-D50 equipment and iPhone to record the sound.

1.Ichiran Ramen

It is a sound that would be found in old Japanese ramen carts stalls, and it is only when people would like to refill noodles that this sound would appear. Fewer ramen stores in Hong Kong would have this ritual, and Ichiran was always there with this sound.

2. A Grocery Store

This chestnut roasting machine was something I stumbled upon while passing by. I noticed that there was a sand-like sound in it, which sounded like the sound of a sand hammer. Later I went online to find out what was added to the chestnut roasting machine and learned that this machine had quartz sand added to it so that you can hear the sound remixed the sand and chestnut.

3. A Fried Snack Store

Deep-fried food is very high in calories, and for me, this type of food is rarely touched. But fried food will bring people a lot of pleasure, the sound of oil splashing up seems to applaud this food, which makes people sound very pleasant, that's why I want to choose this sound.

4. Papa bubble

The reason why I think the sound of cutting candy is special is that there are very few handmade candies nowadays. The staff introduced to me that nowadays most candies are made in factories, and he knows of only two or three handmade candies stores in Hong Kong. Listen carefully to the sound of cutting candy you will find that there is not only the sound of cutting or the sound of candy falling into the box, sounding very rhythmic.

5. Childhood Bakery

This bakery is in my neighborhood and I frequently to there. I never noticed this sound every time I purchased inside. After asking the owner, whenever the bread is baked, it makes this sound.

6. Chung kee Dessert

The sound of shaved ice machine is often found in dessert stores. I often think the ice machine is noisy because the sound it makes is continuous and loud every time.

The sound of a coffee machine operating is very common nowadays. This sound mainly comes from extracting the coffee and frothing the milk. I think the special thing about this sound is that many people like to relieve stress by listening to the sound of the coffee machine operating.

8. Cafe Hunan

Hunan cuisine is a cuisine that is particular about the sound of the wok hei (in Cantonese). What I think is special about this sound is that it requires a large fire, and a normal stove is not up to the standard of fire, so the sound of fire would be very loud. In this recording, you can hear the sound of a large fire and the sound of stir-frying.

9. Shun Fat Chinese BBQ

Barbecued pork (Siu Mei in Cantonese )is a cuisine unique to the Cantonese region. The sound of this chopping is different from ordinary chopping, you can hear the sound of the crispy skin on top of the pork rubbing against the knife, and the moment the knife enters the meat there is a very crispy sound that makes people very appetized.

10. Egg Waffle

Egg Waffle is a very famous snack in Hong Kong, but I never noticed before that there is a sound when making this. Pouring the flour batter into the pan will make a very small and short sound, and it is hard to notice the sound if you don't listen carefully.

Conclusion
During this sound collection, I met some difficulties with the privacy of the kitchen, because most kitchens do not allow other people to enter, so many stores do not allow sound recording. At the same time, when I was recording the sound of the Egg Waffle and Fried food-making process, the chef told me that the process was silent and the sound could not be recorded. But, when a recorder is used to record the sound, and you listen carefully, you can hear the oil splashing or a very small sound. It is also possible that these sounds the chef is already accustomed to, this sound they have to hear every day, and over time they will think that this is not a sound. What I feel most is that it is a completely different feeling to listen carefully to these specific sounds each time and to treat them as background sounds, which normally would not be noticed at all. When these unique sounds are amplified, you can feel that each sound has a unique frequency.
